Title: Chilled Mixed Fruit Soup

3tbButter
1/3cFlour
5cVegetable stock
1 1/4lbMixed fruits, such as raspberries, cherries, blackberries, a
2 1/2cLight cream
  Juice of 1 lemon
1tsGround cinnamon
TO GARNISH
  Light cream
  Mint sprigs

Melt the butter in a pan and add the flour. Cook for 1 minute. Remove from the heat, and stir in the stock and fruits gradually. Bring to a boil, then reduce the heat, and simmer for 10 minutes. Let cool slightly, tehn place in a food processore. Blend for 30 seconds, and strain into a bowl. Stir in the cream, lemon juice and cinnamon. Cover and chill for 3 to 4 hours.

Remove from the refrigerator, and spoon into individual serving dishes. Swirl in a little cream, and garnish with mint sprigs.
